Watermelon Blueberry Feta Salad

Ingredients:

  • 8 Cups - Seedless Watermelon

  • 1 Cup - Blueberries

  • ¼ Cup - Feta

  • 2 TBS - Fresh Mint or Basil

  • 2 Tsp - Olive Oil

  • 2 Tsp - Honey

  • 1 - Lime

  • Salt

Preparation:

  1. Cube watermelon. Place in bowl with blueberries and crumbled feta.

  2. Cut mint or basil into strips. Add to bowl.

  3. In a separate smaller bowl, mix together olive oil, honey, juice of lime and salt to taste.

  4. Pour over watermelon mixture, tossing to combine.

  5. Serve and enjoy!

Tips:

  • Use mozzarella cut into small chunks in place of the feta.

  • Instead of the honey lime dressing, simply juice lime over the watermelon mixture.

  • Get creative! Layer watermelon, mint or basil leaf, topping with a chunk of feta onto toothpicks, then drizzle with balsamic glaze for one bite treats...yum!
