Twice Baked Stuffed Sweet Potatoes

Ingredients:

  • 2 Each - Sweet Potatoes

  • 2 Handfuls - Fresh Spinach

  • 2-3 TBSP - Taco Seasoning (see below)

  • 2 TBSP - Butter

  • 1 TBSP - Water

  • 1 Lb. - Ground Turkey

  • Salt & Pepper, to taste

Preparation:

  1. Preheat oven to 350º.

  2. Using a fork, pierce several holes in potatoes then place directly on oven rack.

  3. Bake 40 to 60 minutes or until tender.

  4. Meanwhile, brown ground turkey with taco seasoning and water in a pan over medium high heat. Set aside.

  5. When potatoes are fully cooked, slice in half lengthwise and scoop out insides being sure to leave the outer skins in tact.

  6. Mash potatoes with butter and salt and pepper to taste.

  7. Once creamy, add spinach and cooked turkey, stirring to combine.

  8. Stuff mixture back into potato skins, then place in a baking dish.

  9. Turn oven to broil and cook potatoes for about 5 minutes or until heated through.

  10. Serve and enjoy!

Tips:

  • Get creative! Serve with fresh salsa and avocado for a delicious finish!
