Stuffed Mushrooms

Ingredients:

  • 1 8-oz. Package - Whole Mushrooms

  • 1/4 Cup - Panko Breadcrumbs

  • 1/4 Cup - Grated Parmesan Cheese

  • 1 TBSP - Italian Seasonings

  • 1/4 Cup - Diced Onion

  • 2 Cloves - Garlic

  • 3 TBSP - Butter

  • Olive Oil

  • Salt & Pepper

Preparation:

  1. Preheat oven to 350º.

  2. Remove stems from mushrooms and mince into small pieces.

  3. Place mushroom caps on a baking sheet and drizzle with a little olive oil and salt and pepper.

  4. Place in oven and cook for about 7-8 minutes. Remove and drain any liquid.

  5. Meanwhile, saute onion and garlic over medium heat in 1 tablespoon of butter and a little olive oil.

  6. Add mushroom stems, italian seasonings, salt and pepper and cook until soft and cooked through.

  7. Remove from heat and add in half of the breadcrumbs and cheese.

  8. Stir to combine and add more breadcrumbs as needed to make a stuffing mixture.

  9. Stuff mixture into caps, then sprinkle with remaining cheese and a little pat of butter on the tops of each.

  10. Cook for about another 7-10 minutes until mushroom are fully cooked and tops are slightly browned.

  11. Serve and enjoy!

Tips:

  • Use either white or baby bella mushrooms.

  • You will most likely have stuffing mixture leftover. Safe for more mushrooms or add to an omlette!

  • I use panko breadcrumbs but regular breadcrumbs work just as well. You won't need to use nearly as much and if your breadcrumbs are seasoned, you can omit the italian seasoning.

  • Get creative! Add spinach, cooked sausage, or even minced walnuts! Sprinkle cooked mushrooms with a little chopped parsley for a pretty presentation.
