  • 4lbs boston pork butt

  • 1 jar Carolina BBQ sauce *I used trader joes brand

  • 2 tbsp apple cider vinegar

  • 1 tsp paprika

  • 1 tsp cumin

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp chili pepper

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp oregano

  1. In a large crockpot, place pork butt fat side up.

  2. Add all ingredients to the crockpot.

  3. Cover and cook for 7-8hrs or until internal temp reaches 140 degrees.

  4. Remove pork from crockpot and place on pan.

  5. Let rest for 10 mins.

  6. Remove the large fat part from the top and shred the pork.

  7. Place shredded pork back in crockpot and mix.

  8. Enjoy!

Notes/Quick Tips:

  • I used the Carolina bbq sauce because it goes great with pork but you can also use regular bbq sauce.

  • You can eat the shredded pork as a sandwich, taco or nachos. If you are wanting to keep it low carb, you can serve next to a salad.

  • If making a sandwich, top with coleslaw to give it a nice fresh crunch. *see quick coleslaw recipe
