Skillet Taco Mac

  • 1lb ground turkey

  • 1/2 onion, diced

  • 1 can of corn, drained

  • 1 can black beans, drained

  • 1 can of tomatoes and green chilies (Rotel)

  • 1 8oz container of cream cheese

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tbsp oregano

  • 1/2 tbsp cumin

  • 1/2 tbsp chili powder

  • 1/2 tbsp garlic powder

  • 1/2 tbsp onion powder

  • 1/2 box of elbow macaroni, cooked

  • 1 tbsp olive oil

  1. Heat pan on medium high. Add oil.

  2. Add onions and sauté for 3 mins. Add turkey and cook until no longer pink

  3. Add seasonings and mix.

  4. Add corn, black beans and tomatoes & green chilies.

  5. Add cream cheese and mix until thoroughly melted.

  6. Add cooked macaroni and enjoy!


Notes/Quick Tips:

  • Top with cilantro, sour cream or shredded cheese.

  • Don’t have black beans? You can use pinto, kidney beans or whatever can of beans you have.

  • If you don’t like spicy, you can just add a canned of diced tomatoes.
