Sautéed Eggplant with Ground Beef

Ingredients:

  • 1 Lb - Ground Beef

  • 1 Each - Eggplant (medium size)

  • 2 Each - Tomatoes (about 2 cups worth)

  • 3 Cloves - Garlic

  • 1 Each - Small Onion

  • Olive Oil

  • Reduced Sodium Soy Sauce

  • Salt

Preparation:

  1. Heat a couple tablespoons of olive oil in a large skillet over medium heat.

  2. Dice eggplant, place in a bowl and toss with a pinch of salt, then saute until browned and almost tender.

  3. Remove eggplant from pan and begin to cook meat.

  4. Meanwhile dice onion, mince garlic, and chop tomatoes.

  5. When meat is halfway cooked, add onion and garlic and cook for about 2-3 minutes, then add tomatoes and eggplant.

  6. Add 1-2 tablespoons of soy sauce and continue cooking until meat is done and vegetables are tender.

  7. Serve and enjoy!

Tips:

  • Replace ground beef with ground turkey or pork or use soy crumbles for a vegetarian version.

  • Serve over rice, noodles, zucchini, or polenta.

  • Fun fact! Although believed to be a vegetable, eggplant is in fact a fruit!
