Roasted Pears & Brussels Sprouts

Ingredients:
1 Lb - Brussels Sprouts
2-3 Each - Pears
1/4 Each - Red Onion
1 Each - Lemon
5-6 Sprigs - Fresh Thyme
2 TBSP - Olive Oil
Salt & Pepper
Preparation:
Preheat oven to 425º.
Wash and cut brussels sprouts in half lengthwise, keeping the root in tact.
Place in a baking dish and drizzle with olive oil and salt and pepper.
Stir together, then arrange brussels sprouts halves face down.
Slice pears into 2" wedges and place on top of brussels sprouts face down.
Slice onion into small pieces and scatter over dish.
Drizzle remaining tablespoon of oil and a little more salt and pepper to taste.
Zest about 1/2 lemon and sprinkle over top of dish. Slice 3 slices and place on top, then juice about 2 tablespoons of lemon and drizzle.
Place whole sprigs of thyme over dish.
Bake in oven for approximately 15-20 minutes until bottom of brussels sprouts are browned.
Stir to mix and cook for another 5-10 minutes until done.
Remove thyme sprigs, place in a serving dish, and squeeze a little more lemon over the dish to taste.
Serve and enjoy!
Tips:
Any pears work fine for this dish, although I prefer d’anjou pears. Be sure they are somewhat firm and not overripe.
Get creative! Add in some chopped pecans or walnuts before baking.
