Roasted Okra

Ingredients:

  • 1 Package - Okra

  • 6 - Scallions

  • 1-1/2 TBSP - Olive Oil

  • 1 Tsp - Salt

  • 1/2 Tsp - Pepper

  • 1 Tsp - Garlic Powder

Preparation:

  1. Preheat oven to 425.

  2. Rinse okra, cut tops off, and cut lengthwise.

  3. Cut scallions (green onions) into 1 inch pieces.

  4. Place okra and scallions on a sheet pan.

  5. Drizzle olive oil, sprinkle with salt, pepper, and garlic powder. Toss to combine.

  6. Roast okra for 30 minutes, tossing every 10 minutes.

Tips:

  • Okra is naturally slimy. By roasting it, you will cook some of that sliminess out.

  • Use as a side dish for a lot of different meals- Chicken, Steak or Fish.
