Rice w/ Pan Fried Garlic Broccoli

Ingredients:

  • 1 Cup - Long Grain Rice

  • 2-1/2 Cups - Water or Broth

  • 3 TBSP - Butter, divided

  • 1/4 Cup - Olive Oil, plus more as needed

  • 5 Cloves - Garlic

  • 1 Head - Broccoli

  • 1 Tsp - Salt

  • Red Pepper Flakes (optional, to taste)

Preparation:

  1. Combine rice, water or broth, and 1 tablespoon of butter in a microwave safe dish with a lid.

  2. Cook for 5 minutes on high, then 20 minutes on 50% power.

  3. Meanwhile, chop broccoli into small, bite sized pieces and mince garlic.

  4. Add remaining butter and olive oil to large pan over medium-medium high heat.

  5. Once hot add broccoli. Stir to coat, then leave untouched until starting to brown.

  6. Stir to redistribute broccoli around the pan.

  7. Add salt, garlic, and red pepper flakes to taste.

  8. Continue cooking until tender being careful not to burn the garlic.

  9. When finished, combine with cooked rice.

  10. Serve and enjoy!

Tips:

  • Add more oil as needed to prevent burning.

  • I use Goya Enriched Long Grain rice and it comes out perfect every time. Be sure to check your rice for specific directions.

  • Get creative! You can combine any vegetables with this dish, not just broccoli. Try using cauliflower rice as a substitute.
