Pressure Cooked Baby Potatoes

Ingredients:

  • 1-1/2 Lbs. - Baby Potatoes

  • 1 Cup - Water

  • 1 TBSP - Olive Oil

  • 1-1/2 Tsp - Onion Powder

  • 1-1/2 Tsp - Garlic Powder

  • 1-2 Tsp. - Salt

  • 1 TBSP - Dried Parsley

  • 2 TBSP - Butter

Preparation:

  1. Pour water into pressure cooker and insert steamer basket or tray.

  2. Add potatoes and set on high pressure for 15 minutes. Quick release pressure when finished.

  3. Remove potatoes and drain water.

  4. Choose the brown or saute button and melt butter and olive oil.

  5. Return potatoes to the pot along with spices.

  6. Gently stir to coat potatoes and allow to cook for 3-4 minutes until browned.

  7. Serve and enjoy!


Tips:

  • If you like you potatoes a little firmer, reduce the steam time by 2-3 minutes.

  • Get creative! Use fresh herbs when finished cooking, or add in some sauteed onion or cooked bacon.
