Pimento Stuffed Eggs

Ingredients:

  • 6 Each - Large Eggs

  • 2 Oz - Sharp Cheddar Cheese, finely shredded*

  • 5 TBSP - Light Mayonnaise

  • 2 TBSP - Pimentos, drained and finely chopped

  • 1/4 Tsp - Worcestershire Sauce

  • 1/2 Tsp - Dijon Mustard

  • Pinch of Garlic Powder

  • Salt and Pepper, to taste

  • Parsley or Chives, for garnish (optional)

Preparation:

  1. Hard boil eggs (see notes).

  2. Peel and cut eggs in half lengthwise.

  3. Remove yolks and place in a bowl.

  4. Mash yolks with a fork, then add remaining ingredients.

  5. Mix together until well blended and creamy.

  6. Place mixture into a piping bag with a tip or a plastic storage bag with the tip snipped off.

  7. Pipe mixture into eggs.

  8. Garnish with a little parsley or chives.

  9. Serve and enjoy!

Tips:

  • We all know peeling hard boiled eggs can be tricky. Click here for a foolproof way to get easy peel hard boiled eggs every time.

  • Depending on the size of your egg yolks, you may need a little more mayonnaise to get a creamy mixture.

  • Using a zester or microplane for the cheese is the best way to get a fine shred.

  • Get creative! Leftover pimento cheese? Spread on a couple pieces of white bread with a little lettuce for a delicious sandwich!
