Lemon Pie

Ingredients:
For Crust
1 1/2 cups shortbread cookies or graham crackers
1/2 cup sugar
6 tbsps butter, melted
For Pie:
2 cans sweetened condensed milk (reserve 3 tbsp for whipped topping)
3 large egg yolks
3/4 cup lemon juice
Dash of salt
For Topping:
1 cup heavy whipping cream
2 tbsps sugar
1 tsp vanilla extract
3 tbsp sweetened condensed milk (the reserve)
1 lemon cut up into wedges
Lemon Zest
Mint, optional
Preparation:
Preheat oven to 350 degrees
Using a food processor, add cookies or graham crackers and pulse until cookies are grounded up. Measure your cookies out to 1 1/2 cups.
Place cookies back into processor and add sugar.
Turn on processor and slowly add in melted butter until mixture looks like “sand”.
Take a greased pie dish and add crust mixture. Pressing until evenly fills the bottom and slightly some of the sides.
Place in oven for 8 mins until slightly browned and set.
Put aside crust to cool.
While crust is cooling, combine all pie ingredients and mix thoroughly making sure to get a thick like consistency.
Pour mixture into cooled crust. Slightly shake until mixture is even.
Place in oven for 10 mins or until pie is set and no longer “jiggly”.
Set aside to cool for 30 mins before placing in the fridge to set for at least 1 hour.
Using a stand up mixer or hand mixer, beat cream, sugar, vanilla and milk until stiff peaks *Whipped Cream
Pour cream over chilled pie and top with lemon wedges, zest and mint (optional)
Slice and enjoy!
Tips:
If you don’t want to make the crust, you can buy pre-made crust.
If you aren’t a whipped cream fan, leave it off!
