Lemon Parmesan CousCous

Ingredients:

  • 1 cup israeli couscous

  • 1 1/4 cup chicken broth

  • 1 tbsp butter

  • 1 lemon, zest & juice

  • 1 shallot, diced

  • 2 garlic cloves, diced

  • 1/4-1/2 cup parmesan

  • 1/4 cup parsley, chopped

  • Salt & pepper to taste


Preparation:

  1. In a small sauce pan over medium heat, add butter and melt.

  2. Add shallots, garlic, zest and parsley and cook for 3 mins.

  3. Add couscous and cook for about 2-3 mins just to lightly brown the couscous.

  4. Add lemon juice and chicken broth then turn to low/simmer and cover. Cook for 10 mins.

  5. Remove pan from heat and add parmesan. Mix to taste and add salt & pepper if desired.

  6. Serve & Enjoy!


Tips:

  • You can use beef broth, veggie broth or water

  • Don’t have parmesan? Use feta or you could even try mozzarella or provolone.

  • You can make this a main dish as well. Add chicken, Italian sausage or keep it vegetarian and add mushrooms and asparagus.
