Lemon Parmesan CousCous

Ingredients:
1 cup israeli couscous
1 1/4 cup chicken broth
1 tbsp butter
1 lemon, zest & juice
1 shallot, diced
2 garlic cloves, diced
1/4-1/2 cup parmesan
1/4 cup parsley, chopped
Salt & pepper to taste
Preparation:
In a small sauce pan over medium heat, add butter and melt.
Add shallots, garlic, zest and parsley and cook for 3 mins.
Add couscous and cook for about 2-3 mins just to lightly brown the couscous.
Add lemon juice and chicken broth then turn to low/simmer and cover. Cook for 10 mins.
Remove pan from heat and add parmesan. Mix to taste and add salt & pepper if desired.
Serve & Enjoy!
Tips:
You can use beef broth, veggie broth or water
Don’t have parmesan? Use feta or you could even try mozzarella or provolone.
You can make this a main dish as well. Add chicken, Italian sausage or keep it vegetarian and add mushrooms and asparagus.
