Grandma's Lima Bean Casserole

  • 30oz frozen lima beans

  • 3 bunches of green onions, diced

  • 7 plum tomatoes from a can *a 28oz whole plum tomato should work

  • 1 tsp paprika

  • 1 tsp oregano

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • Salt & pepper to taste

  • 1/2 cup olive oil

  • 1/2 cup shredded parmesan or romano cheese

  • 1/2 cup - 3/4 cup Italian bread crumbs

  1. Preheat oven to 375 degrees

  2. Defrost lima beans

  3. In a large skillet, heat oil and add diced green onion and cook for 3 mins or until translucent.

  4. Add tomatoes by squishing them with your hands into pieces. *they don’t have to be small just chucks of tomato.

  5. Add lima beans and seasonings. Cook for 3 mins until all is incorporated.

  6. In an 8 x 8 sprayed casserole dish, add lima bean mixture.

  7. Top with bread crumbs and cheese.

  8. Cook in oven for 45 mins or until bubbly, cheese is melted and bread crumbs are browned.


Note/Quick Tips:


  • You could also use baby lima beans as well.

  • Any bread crumbs would work. Panko would be good too. If you are gluten free, leave off the the bread crumbs.

  • This dish is great along side any protein- fish, chicken, beef etc.
