Egg Bites

Ingredients:
5 - 6 Eggs
Cooking spray
Water
Additions (see tips)
Preparation:
Beat eggs in a large bowl.
Add veggies and other ingredients.
Spray molds with cooking spray.
Fill molds no more than ⅔ full with egg mixture.
Cover mold tightly with tin foil.
Add 1 - 1-½ cups of water to bottom of pressure cooker.
Place mold on top of a trivet.
Seal lid making sure release valve is in the closed position.
Set timer for 10 minutes.
Manually release pressure when timer beeps.
Carefully remove mold from pot and uncover.
Serve and enjoy!
Tips:
Be sure to read your user manual for your pressure cooker. Steam is very hot and can cause severe burns.
If layering more than one mold, rotate each one a bit so the cups aren’t directly over the one below.
Test to make sure your eggs are done by inserting a toothpick. If it’s still wet in the middle, return to cook for just another minute.
Don’t add to many extra ingredients. You still want to maintain an omelette consistency.
Get creative! Add extras such as spinach, mushrooms, shredded cheese, or pre-cooked bacon.
