Crockpot Mississippi Pot Roast

Ingredients:

  • 3-5lbs chuck roast

  • 1 pkt onion soup

  • 1 pkt ranch dressing mix

  • 1/2 cup peperoncini, sliced *or you can use 4-5 whole peperoncinis

  • 1 stick butter, salted

  • 1 tbsp olive oil

Preparation:

  1. Heat large pan on medium high. Add oil.

  2. Brown chuck roast on each side. *Only a few minutes on each side

  3. Place chuck roast in crockpot and add all ingredients.

  4. Put crockpot on low for 6-8hrs. Check pot roast to make sure beef shreds.

  5. Enjoy on top of mashed potatoes.

Tips:

  • You could make this in the pressure cooker. I would suggest doing it in the crockpot though. I have learned that meat is best slow cooked in order to shred the way you want.

  • To make this easier, you can skip the searing. You don't have to sear the beef if you don't want to. It will still taste great either way!

  • If you don’t have onion mix, you can use Au Jus packet.

  • If you don’t like peperoncini, you can use other peppers, whatever you prefer.
