Chicken Lettuce Wraps

- 1lb ground chicken

  • 5 green onions, diced

  • 2 large carrots, shredded or ribboned

  • 4 garlic cloves, diced

  • 1/2 onion, diced

  • 1 tbsp olive oil

  • 3/4 cup mushroom, finely diced

  • 1/2 tsp pepper

  • 1 tbsp olive oil

  • 2 tbsp soy sauce, low sodium

  • 1 1/2 tbsp oyster sauce

  • 1/4 cup hoisin sauce (or you can use barbecue sauce mixed with a little molasses)

  • 1 tsp ginger

  • 1 tsp sesame oil

  • Sriracha for topping, optional

  • Romaine, green leaf or butter lettuce

  1. Heat a large sauce pan with oil on medium high heat.

  2. Add onions, cook for 3 mins. Add mushrooms and garlic, cook for 3 additional minutes.

  3. Add ground chicken and cook, no pink.

  4. Add carrots and stir.

  5. Add all other ingredients and cook for 5 mins.

  6. Spread mixture on top lettuce leaves and top with sriracha


Notes/Quick Tips:

  • If you don’t have hoisin, you can use the method I listed above.

  • You can use ground turkey as well.
