Burrata Pasta Salad

Ingredients:

  • 5 tomatoes, diced

  • 1/2 cup pesto

  • 2 tbsps olive oil (or more depending on your preference)

  • 8oz orzo, cooked

  • 8 oz container of burrata

  • Salt & pepper to taste

  • 1/2 tsp Italian seasoning

Preparation:

  1. Combine tomatoes, orzo, 1 tbsp olive oil, and pesto.

  2. Top with burrata- cut the burrata mini’s in half.

  3. Top with a sprinkle of salt, a little pesto, Italian seasoning and the remainder tbsp of olive oil.

  4. Enjoy!

Tips:

  • Add ons- you could add a little fresh spinach to add color and more veggies!

  • If you don’t have orzo, another small pasta would work just fine.

  • Add a drizzle of balsamic for color and flavor.

  • You can use cherry tomatoes for this as well- Do a mix for more color!

I'm going to try this substituting cauliflower rice for the orzo.
