Burrata Pasta Salad

Ingredients:
5 tomatoes, diced
1/2 cup pesto
2 tbsps olive oil (or more depending on your preference)
8oz orzo, cooked
8 oz container of burrata
Salt & pepper to taste
1/2 tsp Italian seasoning
Preparation:
Combine tomatoes, orzo, 1 tbsp olive oil, and pesto.
Top with burrata- cut the burrata mini’s in half.
Top with a sprinkle of salt, a little pesto, Italian seasoning and the remainder tbsp of olive oil.
Enjoy!
Tips:
Add ons- you could add a little fresh spinach to add color and more veggies!
If you don’t have orzo, another small pasta would work just fine.
Add a drizzle of balsamic for color and flavor.
You can use cherry tomatoes for this as well- Do a mix for more color!
I'm going to try this substituting cauliflower rice for the orzo.
