Breakfast Casserole

Ingredients:

  • 1 Lb. - Bulk Breakfast Sausage

  • 4 Each - Scallions

  • 1 Cup - Shredded Cheese of choice

  • 4 Each - Eggs

  • 2 Cups - Whole Milk

  • 1 Cup - Baking Mix (see tips)

Preparation:

  1. Preheat oven to 400º and spray a 9x13 baking dish with cooking spray.

  2. Cook sausage and drain fat.

  3. Spread cooked sausage in bottom of pan. Layer with chopped scallions and cheese.

  4. Whisk together eggs, milk, and baking mix.

  5. Pour over top of sausage and bake 20-25 minutes until done.

  6. Allow to cool for about 5 minutes then cut into squares.

  7. Serve and enjoy!

Tips:

  • Serve with a dollop of sour cream or greek yogurt, fresh parsley, diced tomatoes, and fresh diced avocado.
