Balsamic Bacon Brussel Sprouts

  • 1 lb brussel sprouts

  • 4 slices of bacon

  • 1 tbsp olive oil

  • 2 tbsp balsamic vinegar plus additional for topping *I used blackberry ginger

  • Salt & pepper to taste

  1. Cut the bottoms off the brussel sprouts and cut them into small long pieces. *You can also cut them in half but they will take longer to cook and will be less crispy.

  2. Cut bacon into small pieces.

  3. Heat large cast iron or sauté pan on medium high heat then add bacon.

  4. Cook bacon until crispy about 5 mins or so.

  5. Remove bacon and set aside being sure to leave the bacon grease.

  6. Add oil to the grease then add brussel sprouts.

  7. Cook for about 10 minutes or until crispy and the sprouts are soft.

  8. Add cooked bacon, salt, pepper and balsamic. Stir until all is incorporated.

  9. Once plated, top with additional balsamic.

Notes/Quick Tips:

  • Try any type of balsamic! All the flavors will work great.

  • For a vegetarian option, you can just use oil and omit the bacon.

  • Try it with turkey bacon! Make sure though that you add extra oil as turkey bacon does not have grease like pork bacon.
