Bacon Brussel Sprout Salad

Ingredients:

  • 4 Dozen - Brussel Sprouts

  • 7 Slices - Thick Cut Bacon

  • 1/2 Each - Red or Yellow Onion

  • 1 Cup - Parmesan Cheese

  • 1/4 Cup - Slivered Almonds

  • 1 Each - Orange

  • 1 Each - Lemon

  • 1/2 Cup - Extra Virgin Olive Oil

  • Salt

  • Pepper

  • Oregano

Preparation:

  1. Chop brussel sprouts into shreds and place in a large bowl.

  2. Cook bacon then chop into bite size pieces.

  3. Chop onion and place into bowl with the brussel sprouts and bacon.

  4. Shred cheese and add to bowl along with almonds.

  5. Squeeze orange and lemon into a separate bowl, then slowly drizzle the olive oil while vigorously whisking to emulsify the mixture. Season with salt, pepper, and oregano. You may adjust olive oil more or less to taste.

  6. Pour marinade over brussel sprouts. Cover and refrigerate for an hour allowing flavors to combine.

  7. Serve and enjoy!


Tips:

  • For a quick timesaver, use pre-shredded brussel sprouts and cheese.

  • Use any kind of hard cheese such as romano, asiago, etc.

  • Get creative! Add dried cranberries or use different kinds of chopped nuts such as walnuts or pecans.
